Whole Wheat Pancakes in the Blender

 If there is one meal that has sustained us during this pandemic, it's this whole wheat pancake recipe that my friend shared on FB early last spring.  

It makes good use of all that wheat grain in our basement, and it's easy to grind up in my Bosch blender in just one step.  

I made it many mid-mornings of cyber-schooling, and it brought people out of the woodwork, filled bellies, and brought smiles.  I made it so often in 2020 that I ended up buying a Christmas ornament of a stack of hotcakes to commemorate the year. 

I am sharing it here, mostly to keep it where I can easily access it and for others to use.



Whole Wheat Pancakes in a Blender


Ingredients:

1 cup whole wheat grains

1 1/2 cup milk

1/2 cup vegetable oil

2 eggs

1 Tbsp. baking POWDER

1/2 tsp salt

1 Tbsp. honey


Instructions:

Place 1 cup wheat grains and 1 cup milk in blender.

Cover and blend on high for 2 minutes.

Then add 1/2 cup of milk more and blend for 4 minutes on high.

Add 2 eggs, 1/2 cup oil, 1 Tbsp honey, 1/2 tsp salt.  Blend until well-mixed.

Finally, add 1 Tbsp Baking Powder.  Blend until just mixed.

Cook pancakes on a hot griddle.

Note: I double this recipe for our family of 8.  I could easily triple it, but my blender pitcher won't quite hold that much!
