I felt bad that Steve didn't get to go out to breakfast with us at Billy's Diner yesterday and taste the delicious gingerbread pancakes that we had...plus, I craved MORE! So I looked up a recipe for them after church today and made these gingerbread pancakes that tasted pretty much the same! So rich and savory--delish!! I do believe that a new Christmas tradition has been born. These would be excellent on Christmas morning or at our Christmas Eve morning breakfast that we call Holiday Hotcakes!
Here is the recipe that I used...It was very easy!
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground dried ginger
- 1 teaspoon ground cinnamon
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 cup molasses
- 1 1/2 cups water
Directions
- Whisk the flour, baking powder, baking soda, salt, ginger, and cinnamon in a bowl; set aside. Beat the egg in a separate mixing bowl with the vanilla and molasses until smooth. Whisk in the water until completely incorporated. Stir the flour mixture into the molasses mixture until just combined -- a few lumps are okay.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
- I also made a cream cheese frosting (cream cheese whipped with 1 tsp vanilla and a bit of salt, then whip in powdered sugar).
- When the pancakes are cooked, I spread the cream cheese frosting between two pancakes on a plate. Then I sprinkle with powdered sugar, cinnamon, walnuts, and craisins.
yummy yum, yum...those pancakes sure looks great. Jocelyn I hope the kids enjoyed the stuff I sent them, it wasn't much but it was fun to send them a little something and the cd. I loved that cd, it has great songs for the little ones. Also I am posting 20 days of holiday decorating on my blog and since I know you love the 50's I just posted many vintage 40's & 50's ornaments and some trees from that era also...Hugs to all and to all a good night.
