One of our favorite (and easiest) dinners to make and eat in 2020 has been this one-pan (actually our family requires two) chicken and vegetable bake.
The girls have gotten lots of time to help cook, and this is one that everyone enjoys.
We use bone-in chicken thighs, dipped in melted butter and then breaded in Italian bread crumbs.
We place them on a foil-lined baking sheet and add chopped up vegetables (sweet potatoes, brussels sprouts, potatoes, etc. are a favorite). Then we drizzle with oil, salt and pepper, and sometimes...more pats of butter for taste.
Then we bake at 475 degrees for 35 minutes. It turns out perfect every time.
