We've just returned from a really fun Memorial Day picnic.
The food was amazing and there was so much of it! The kids had a massive 3-hour-long water fight while the parents all chilled. (Guy can check that one off of his list of Summertime Fun activities.)
I entered this Raspberry dessert in the Pie bake-off and received First place!
Yay! To be fair, it was 95 degrees, so anything frozen and fruity was bound to win!
But it is also an awesome recipe.
My mom made it for us a lot growing up,
but I had never made it, so I called her up this week to get the recipe.
She calls it Ritz Raspberry Dessert.
I call it Raspberry Riot Pie.
You will call it Delicious!
Ingredients:
3 egg whites
1/2 tsp baking powder
3/4 cup of sugar
14 Ritz crackers, finely crushed
2/3 cup nuts, chopped (I used unsalted peanuts, mmm!)
1/2 tsp vanilla
1 package frozen raspberries
2 egg whites
2 Tbsp lemon juice
3/4 cup sugar
8 oz package of whipped topping
Directions:
Beat egg whites and add baking powder. Beat until stiff.
Gradually add sugar and vanilla. Fold in crackers and nuts.
Place in a well-greased 10" pie-pan or spread on a greased pizza pan.
Bake at 300 degrees for 30 minutes. Do no overcook. Let cool completely.
Mix the frozen raspberry until fairly smooth using an electric mixer.
Add in egg whites, lemon juice, and sugar.
Fold in the cool whip. Spread over crust and freeze.
You can also make a second layer of the crust to crumble over top of the pie.
Delicious!
